Madeleines
INGREDIENTS:
2 large eggs (in a 2 cup measure)
2/3 cup sugar
1 cup flour (plus 1 tbs)
1 1/4 sticks butter (cut into 6 pieces)
pinch of salt
grated rind of half a lemon
drops of lemon juice
drops of vanilla
DIRECTIONS:
Measure 1/4 cup of the eggs and mix with sugar and flour, let rest 10 min.
Brown the butter in a saucepan.
Mix 1 1/2 tablespoons of browned butter and flour (for madeleine pans)
Cool remaining butter, add it to batter with the rest of ingredients
Bake at 375° for 15 minutes.
Remove from pan IMMEDIATELY
