Hummus

INGREDIENTS:

1/2 cup of cooked chickpeas

1/2 teaspoon of baking soda

1/4 cup of lemon juice

1 large garlic clove, chopped

1/2 teaspoon of salt

1/2 cup of tahini

2-4 tablespoons of ice water

1/2 teaspoon of cumin

1 tablespoon of olive oil

ground paprika and olive oil for garnish

DIRECTIONS: 

In a food processor, combine the lemon juice, garlic, and salt. Process until the garlic is finely chopped. Let rest for 10 minutes.

Add the tahini and blend until the mixture is thick and creamy.

Slowly add the ice water. 

Add the chickpeas and cumin. 

While blending, slowly add the olive oil.

The mixture should be creamy.

Serve in a bowl with olive oil and paprika.
